L'shanah tovah, everyone. We baked for Rosh Hashanah.

Well, as the only veggies Magpyewerks had a lot of at the moment are kholrabi, we settled on a honey cake . I suggested that we try a new flavor combo this year, so in went star anise, cinnamon, coffee, ginger and brandy. It turned out to be delicious. I have gotten to try so many new and wonderful foods during my travels!

Here’s the recipe. Magpyewerks is calling it Gulli’s Honey-Bunny cake. I guess because I helped with the flavors.

Gulli’s Honey-Bunny Cake

This is super easy to make with just a bowl and whisk, no mixer needed.

Oven 300, grease/Pam 9x5 loaf pan

Warm together:

3/4 C honey

1/2 C espresso or strong coffee

Beat together:

2 eggs

3/4 C dark brown sugar

3 Tbs neutral vegetable oil

2 Tbs brandy

Sift together:

2 C flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp star anise (or 1/4 tsp cloves and 1/4 tsp nutmeg)

1/4 tsp ginger

Dump dry ingredients into egg mixture, stir until mostly combined, then add the honey mixture.

Whisk briskly until homogeneous-mixture is pretty thin for cake  batter, but it works

Immediately pour into the prepared pan and bake. Could take anywhere from 55 to 70 or more minutes.

When done, cake  will slightly pull away from the sides of the pan, and spring back when lightly pressed. Toothpick test should be clean.

Cool and enjoy!
